Chicken Parmesan Meatball Skillet

Deconstructed chicken Parmesan sandwich using homemade roasted tomato sauce.
Ingredients:
  • 1 lb ground chicken
  • 1/2 cup Progresso™ Italian style bread crumbs
  • 1/3 cup plus 2 tablespoons grated Parmesan cheese
  • 1/4 cup milk
  • 1/4 teaspoon pepper
  • 1 egg
  • 1 tablespoon olive oil
  • 1 jar (24 oz) tomato-basil marinara sauce
  • 1 cup shredded mozzarella cheese (4 oz)
  • 2 tablespoons sliced fresh basil leaves
Instructions:
  • Combine chicken, bread crumbs, 1/3 cup Parmesan cheese, milk, salt, pepper, and egg in a large bowl. Form mixture into 20 meatballs.
  • Heat oil over medium-high heat in a 10-inch nonstick skillet. Add meatballs and cook until browned on all sides, approximately 3 minutes per side. Remove and drain excess oil.
  • Pour the marinara sauce into the skillet and lower the heat to simmer. Cover and allow to cook for 5 to 8 minutes until the meatballs are fully cooked with no pink inside (minimum 165°F). Take the skillet off the heat and sprinkle mozzarella cheese, the remaining 2 tablespoons of Parmesan cheese, and fresh basil on top.
  • Scoop up a generous portion of meatballs and sauce into individual serving bowls for a delicious presentation.
