Delicious pasta dish with sauteed chicken, veggies, grape tomatoes, and Parmesan cheese.
Ingredients:
  • 1 pound farfalle (bow tie) pasta
  • 4 tablespoons olive oil, divided
  • 1 egg
  • 2 tablespoons water
  • 1 cup Italian seasoned bread crumbs
  • 1 pound skinless, boneless chicken breast halves - cut into bite-size pieces
  • 1 clove garlic, minced
  • 1 onion, chopped
  • 0.5 green bell pepper, chopped
  • 0.5 red bell pepper, chopped
  • 0.5 yellow bell pepper, chopped
  • 0.5 cup chopped fresh mushrooms
  • 1 cup Greek salad dressing
  • 0.5 pint grape tomatoes
  • 0.5 cup grated Parmesan cheese
Instructions:
  • 1. Boil a pot of lightly salted water, then add the pasta. Cook for 8 to 10 minutes until al dente, then drain.
  • First, warm 3 tablespoons of olive oil in a skillet over medium heat. Combine the egg and water in one bowl, and the bread crumbs in another. Dip the chicken pieces in the egg mixture, then coat them in bread crumbs. Cook the coated chicken in the skillet for about 5 minutes on each side until golden brown and fully cooked. Drain on paper towels before serving.
  • In a separate skillet over medium heat, warm up the remaining tablespoon of olive oil. Add garlic, onion, green bell pepper, red bell pepper, yellow bell pepper, and mushrooms. Saute until vegetables are tender.
  • Combine pasta, chicken, and vegetables in a large bowl. Drizzle with Greek dressing and mix well. Garnish with tomatoes and sprinkle with Parmesan cheese before serving.
