Elevate your lunchbox with delicious chicken pasties.
Ingredients:
  • 60g unsalted butter
  • 1 onion, chopped
  • 2.50 gm curry powder
  • 1 carrot, peeled, grated
  • 2 sticks celery, chopped
  • 10 button mushrooms, chopped
  • 500.00 ml shredded, barbecued chicken
  • 270g can corn kernels, drained
  • 20.00 ml plain flour
  • 375ml (1 1/2 cups) chicken style liquid stock
  • 6 sheets puff pastry, defrosted
  • Milk or egg yolk, to brush pastry
Instructions:
  • Preheat your oven to 180°C. In a pan over medium heat, melt butter. Sauté onion and curry until onions are soft but not brown. Add carrot and celery and cook for 1-2 minutes.
  • Sauté mushrooms for 2 minutes, then add chicken and corn. Stir until mixed. Add flour, then slowly pour in stock while stirring until mixture thickens. Let cool.
  • Cut each pastry sheet into quarters. Spoon about 2 tablespoons of the mixture onto the center of each piece of pastry. Fold a corner over diagonally to create a triangle shape. Press the edges together with a fork to seal, then brush with milk or egg yolk for a beautiful finish.
  • Continue with the rest of the pastry and filling. Transfer to a parchment-lined baking sheet and bake until golden brown, approximately 20-25 minutes.
