Chicken Peanut Curry

Succulent chicken infused with vibrant West African flavors like peanuts, lime, coriander seed, ginger, and chili, garnished with aromatic cilantro, mint, and onions.
Ingredients:
  • 3 pounds boneless, skinless chicken pieces (or you can use bone-in for added flavor), cut into 1 1/2 inch wide chunks or strips
  • 2/3 cup all purpose flour
  • 4 tablespoons yellow curry powder
  • 1 1/2 teaspoons sea salt
  • 1/2 teaspoon freshly ground peppercorns
  • 1/3 cup extra virgin olive oil
  • 2 tablespoons fresh ginger, minced
  • 2 tablespoons garlic, minced
  • 2 serrano chili peppers, seeded, de-veined, minced
  • 4 cups chicken broth
  • 2/3 cup peanut butter (if using freshly ground peanuts, add 2 teaspoons of sugar)
  • 1 teaspoon ground coriander seeds
  • 8 green onions, chopped, greens included
  • 1/3 cup each finely chopped mint and cilantro
  • 3 tablespoons lime juice
Instructions:
  • Prepare the seasoned flour by mixing curry powder, salt, and pepper in a large bowl. Toss the chicken pieces in the seasoned flour until coated.
  • Brown chicken pieces in batches in hot oil in a large pot until coating sets and browns, about 2-4 minutes per side. Transfer cooked chicken to a bowl as you go.
  • After browning the chicken, combine ginger, garlic, chili pepper, and 1/2 cup of chicken broth in the saucepan. Cook briefly, scraping and stirring to blend. Whisk in peanut butter, then slowly add the remaining 3 1/2 cups of broth while stirring continuously for a smooth consistency.
  • Return chicken to pot and simmer for 15-25 minutes.
  • Garnish with a vibrant mix: Just before serving, sprinkle in the ground coriander, cilantro, mint, and green onions. Season with salt and lime juice to your liking. Enjoy with a side of rice.
