Quick and delicious spin on a classic sandwich.
Ingredients:
  • 1 focaccia bread (2 inches thick), cut into fourths
  • 1/2 cup basil pesto
  • 1 cup cubed cooked chicken breast
  • 1/2 cup chopped red bell pepper
  • 2 tablespoons finely chopped red onion
  • 4 slices (1 oz each) provolone cheese
Instructions:
  • Preheat contact grill for 3 to 5 minutes.
  • Split each piece of focaccia in half horizontally. Generously spread 1 tablespoon of flavorful pesto on the cut sides of each half. Layer the savory bottom halves with a quarter of the succulent chicken, vibrant bell pepper, aromatic onion, and gooey cheese. Top with the remaining focaccia halves to create a delectable sandwich.
  • Once the grill is preheated, carefully place the sandwiches on the grill and close the lid. Grill for 3 to 5 minutes until the focaccia is golden brown and the cheese is melted.
