Transform a simple chicken sandwich into a gourmet Italian masterpiece with pesto, prosciutto, and melty mozzarella.
Ingredients:
  • 1 tablespoon basil pesto
  • 1 tablespoon mayonnaise
  • 2 slices bread
  • 2 slices cooked oven roasted chicken
  • 2 slices prosciutto
  • 2 slices mozzarella cheese
  • 2 slices roasted red pepper
  • 1 teaspoon butter
Instructions:
  • On one slice of bread, spread a delightful mixture of pesto and mayonnaise. Layer the savory meats, rich cheese, and flavorful peppers to create a scrumptious sandwich. Finish with the second slice of bread on top.
  • Spread the top bread slice with half of the butter.
  • Preheat a grill pan over medium heat and coat with cooking spray. Once hot, place the sandwich butter-side down. Place a foil-covered brick or another pan on top to press. Cook for 2 to 3 minutes until golden brown. Butter the top slice of bread with the remaining butter before flipping the panini.
  • Continue grilling and gently pressing the panini for an additional minute or two until it is golden brown and the cheese has melted.
