Try these quick and delicious Italian-style creamy chicken paninis - ready in 30 minutes!
Ingredients:
  • 4 boneless skinless chicken breasts (about 1 1/4 lb)
  • 4 hard rolls (about 5x3 inches), split
  • 4 slices red onion
  • 1 large tomato, sliced
  • 1/3 cup Caesar dressing
  • 1/4 cup shredded Parmesan cheese (1 oz)
  • 4 leaves romaine lettuce
Instructions:
  • Place the chicken breasts between sheets of plastic wrap or wax paper and carefully pound them with a meat mallet or rolling pin until they are approximately 1/4 inch thick.
  • Heat 8- or 10-inch skillet sprayed with cooking spray over medium-high heat. Cook chicken for 10 to 15 minutes, turning once, until no longer pink in center. Keep warm after removing from skillet.
  • Start by placing the rolls in a skillet, cut sides down, and cook over medium heat for about 2 minutes until they are nicely toasted. Then, assemble the sandwiches by placing chicken on the bottom halves of the rolls, and topping them with onion, tomato, dressing, cheese, lettuce, and finally, the top halves of the rolls.
