Caesar Chicken with Orzo

Elevate chicken with Caesar salad dressing for a regal meal.
Ingredients:
  • 1 tablespoon vegetable oil
  • 4 boneless skinless chicken breast halves (1 pound)
  • 1 3/4 cups Progresso™ chicken broth (from 32-ounce carton)
  • 1 cup water
  • 1 cup uncooked orzo or rosamarina pasta
  • 1 bag (1 pound) frozen broccoli, green beans, pearl onions and red peppers
  • 3 tablespoons Caesar dressing or reduced-fat Caesar dressing
  • 1/8 teaspoon coarsely ground pepper
Instructions:
  • In a 10-inch skillet over medium-high heat, sizzle the chicken in hot oil for approximately 10 minutes until both sides turn golden brown. After, remove the chicken from the skillet and keep it warm.
  • Pour broth and water into a skillet and bring to a boil. Add pasta and continue to boil. Cook uncovered for 8 to 10 minutes, stirring occasionally. Finally, add frozen vegetables and dressing, making sure to cut any large broccoli pieces in half.
  • Add the chicken to the pasta mixture, and sprinkle with pepper. Bring to a boil, then reduce heat and simmer uncovered for about 5 minutes or until the vegetables are crisp-tender and the chicken is fully cooked.
