Chicken Caesar waffles

Whip up delicious Caesar salad waffles with chicken, avocado, and bacon for a quick and tasty lunch option.
Ingredients:
  • 1 avocado, sliced
  • 435ml (1 3/4 cups) milk
  • 80ml (1/3 cup) vegetable oil
  • 50g (2/3 cup) finely grated parmesan
  • 1 baby cos lettuce, shredded
  • 1/2 barbecued chicken, meat and skin shredded, bones removed
  • 4 rashers shortcut bacon, cooked until crisp, chopped
  • Micro herbs, to serve
  • 85g (1/3 cup) whole egg mayonnaise
  • 2 anchovy fillets, finely chopped
  • 21.00 gm fresh lemon juice
  • 3.05 gm Worcestershire sauce
Instructions:
  • Prepare the dressing by whisking together all the ingredients until creamy, then set it aside.
  • In a large bowl, sift the flour and a generous pinch of salt, then create a well in the center. In a jug, whisk together the eggs, milk, and oil. Pour this mixture into the flour and gently stir with a whisk until combined. Finally, fold in 25g (1/3 cup) of parmesan cheese.
  • Preheat oven to 100C/80C fan forced. Preheat a non-stick waffle maker, lightly oil the top and bottom. Pour 1/3 cup batter onto the base, close the lid, and cook for 2 minutes until golden. Keep warm in the oven and repeat with the rest to make 3 more waffles. For the final 4 waffles, sprinkle 1 tablespoon of parmesan on each after cooking, then cook for 1 more minute until the cheese melts.
  • On each plate, elegantly arrange 1 plain and 1 cheese waffle. Layer with lettuce, chicken, avocado, and bacon. Drizzle with dressing and sprinkle with micro herbs for a gourmet finish.
