Simplify weeknight dinners with this deliciously easy recipe.
Ingredients:
  • 6 rindless shortcut bacon rashers
  • olive oil cooking spray
  • 400g chicken tenderloin
  • 8 slices thick white crusty bread
  • 1 baby cos lettuce, leaves washed, shredded
  • 65.63 gm 99% fat-free caesar salad dressing
  • 82.50 ml shaved parmesan cheese
Instructions:
  • Cut bacon rashers lengthways, then into thin strips. Spray a large non-stick frying pan with oil and heat over medium heat. Cook bacon, stirring occasionally, until crisp, about 5 minutes. Transfer to a plate and cover to keep warm.
  • Turn up the heat to medium-high. Cook the chicken for 3 to 4 minutes on each side until golden and fully cooked. Slice it into thick pieces. Preheat the grill to medium-high and toast the bread for 2 to 3 minutes on each side.
  • In a large bowl, combine lettuce, bacon, chicken, and dressing. Toss until well mixed. Divide the mixture onto toast, sprinkle with Parmesan, season with pepper, and serve.
