Create a delicious Caesar salad-inspired pita filling with chicken, bacon, Parmesan, and croutons.
Ingredients:
  • 1 pound skinless, boneless chicken breast halves
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 3 slices bread, cut into 1/2 inch cubes
  • butter flavored cooking spray
  • 1 teaspoon garlic salt
  • 1 teaspoon dried parsley
  • 0.5 pound bacon
  • 1 large head romaine lettuce leaves, torn into bite size pieces
  • 1 (8 ounce) bottle bottled Caesar salad dressing
  • freshly grated Parmesan cheese to taste
  • salt and black pepper to taste
  • 1 (10 ounce) package (6-inch) pocket pita bread, halved
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C).
  • In a saucepan, combine chicken, garlic powder, thyme, and rosemary. Cover with water, bring to a boil, then lower heat. Simmer covered until chicken is tender and cooked through, approximately 15 minutes. Allow chicken to cool before slicing into strips.
  • Place bread cubes on a baking sheet and generously spray with butter spray. Sprinkle with garlic salt and parsley for added flavor.
  • Bake bread cubes in a preheated oven until golden brown and crunchy, about 5-10 minutes. Turn cubes, spray with butter spray, and sprinkle with garlic salt and parsley before baking again. Remove from oven, and let cool before serving.
  • In a large, deep skillet, sizzle the bacon over medium high heat until it turns beautifully brown and crispy. Transfer the bacon to a paper towel to drain and crumble it into delicious bits.
  • In a big bowl, mix chicken, bacon, lettuce, and croutons. Drizzle Caesar dressing and Parmesan cheese, then season with salt and pepper. Toss well and spoon into pita bread halves to serve.
