Chicken Caesar Toasts

Mini Caesar chicken salads - irresistible appetizer.
Ingredients:
  • 8 cloves garlic
  • 0.5 cup olive oil, plus
  • 2 teaspoons olive oil
  • 2 12-inch baguettes, cut into 48 1/2-inch thick slices
  • 0.5 cup mayonnaise
  • 1 teaspoon finely grated lemon zest
  • 3 tablespoons lemon juice
  • 1 teaspoon Worcestershire sauce
  • 0.5 cup grated Parmesan cheese, plus shavings for garnish
  • 3 cups shredded breast from a large rotisserie chicken
  • Salt and ground black pepper
  • 4 cups baby salad greens, romaine, if possible
Instructions:
  • Preheat your oven to 425 degrees with the rack in the center position.
  • Mince garlic in a food processor or blender. While blending, gradually pour in 1/2 cup of olive oil. Blend for 30 seconds, then strain the infused oil through a fine-mesh strainer. Return 2/3 of the garlic to the oil, and save the rest for the dressing.
  • Place bread slices on a wire rack over a baking sheet. Brush with aromatic garlic oil. Toast in the oven until beautifully crispy and golden, approximately 7 minutes. In a small bowl, combine mayonnaise, lemon zest, 2 tablespoons lemon juice, Worcestershire sauce, grated Parmesan, and the remaining garlic. This flavorful mixture can be refrigerated for hours before using.
  • Before serving, combine the dressing with the chicken and season with salt and pepper. Dress the salad with 2 teaspoons of olive oil, salt, and pepper. Mix in the remaining 1 tablespoon of lemon juice. Top each toast with greens, chicken, and Parmesan shavings. (Toasts are good uncovered for 2 hours.)
