Transform leftover chicken into delectable chicken Caesar wraps with romaine lettuce, olives, and a homemade creamy Caesar dressing.
Ingredients:
  • 6 tablespoons mayonnaise
  • 3 tablespoons grated Parmesan cheese, divided
  • 3 pieces anchovy fillets, minced
  • 2 teaspoons lemon juice
  • 1.5 teaspoons minced garlic
  • 0.5 teaspoon Worcestershire sauce
  • 0.5 teaspoon Dijon mustard
  • salt and freshly ground black pepper to taste
  • 2 cups roughly chopped romaine lettuce
  • 2 cups diced cooked chicken
  • 2 tablespoons coarsely grated Parmesan cheese
  • 2 tablespoons sliced ripe olives
  • 8 medium cherry tomatoes, sliced
  • 1 (7 ounce) package 4-pack naan breads
Instructions:
  • Prepare a delicious Caesar dressing by blending mayonnaise, 1 tablespoon Parmesan cheese, anchovies, lemon juice, garlic, Worcestershire sauce, and Dijon mustard in a food processor until smooth. Season with salt and pepper to taste.
  • In a salad bowl, mix together lettuce, chicken, remaining Parmesan, and olives. Pour Caesar dressing over the salad and toss until everything is evenly coated.
  • Divide the flavorful chicken mixture between the naan breads, generously scattering the cherry tomatoes. Gently fold the naan breads around the savory filling and secure with a toothpick if desired.
