Caesar dressing marinade transforms grilled chicken thighs into a golden, flavorful delight with rich parmesan and egg yolk.
Ingredients:
  • 6 garlic cloves, sliced
  • 6 anchovy filets
  • 1 teaspoon kosher salt
  • 1 teaspoon freshly ground black pepper
  • 1 tablespoon Dijon
  • 1 egg yolk
  • 1/4 cup fresh lemon juice
  • 1 teaspoon sugar (omit if using Meyer lemons)
  • 1 tablespoon vegetable oil
  • 1 tablespoon olive oil
  • 2 tablespoons grated Parmigiano-Reggiano
  • 2 1/2 pounds boneless skinless chicken thighs
Instructions:
  • In a large bowl, mash anchovies, garlic, salt, and pepper using a potato masher or the back of a fork until it forms a coarse paste.
  • Whisk together lemon juice, egg yolk, Parmesan cheese, Dijon mustard, oil, and sugar until well combined. Add chicken thighs to the marinade, ensuring they are fully coated. Place everything in a resealable bag and refrigerate for 8 to 18 hours for optimal flavor.
  • Prepare the outdoor charcoal grill by preheating it to high heat and lightly oiling the grate.
  • Grill the chicken until it's golden brown and the juices run clear, about 4 to 5 minutes on each side, adjusting for heat and thigh size. Use an instant-read thermometer to ensure it reaches 165°F (74°C) in the center.
  • Drizzle with luscious olive oil and sprinkle with fresh parsley. Offer with additional Parmigiano-Reggiano cheese, for added indulgence.
