Elevate your weeknight dinner with a smoky grilled Chicken Caesar salad for a delicious and simple meal.
Ingredients:
  • For the grilled chicken
  • 1/4 cup olive oil
  • Zest from one lemon
  • 2 cloves garlic, finely minced
  • 1/2 teaspoon salt
  • 1/2 teaspoon fresh ground black pepper
  • 1 pound boneless skinless chicken thighs
  • For the grilled croutons
  • 1 clove garlic, minced
  • 1 loaf crusty baguette, cut into slices about 1/2-inch thick
  • To assemble
  • 4 heads romaine lettuce hearts
  • Heaping 1/2 cup (2 ounces) Parmesan, thinly shaved
  • Fresh cracked black pepper
  • 1/2 cup Caesar dressing, store-bought or homemade , or more as needed
Instructions:
  • Prepare the chicken marinade: Combine olive oil, lemon zest, garlic, salt, and pepper in a medium bowl. Add the chicken, ensuring it's evenly coated. Cover and refrigerate for a minimum of 20 minutes, or up to 24 hours for deeper flavor.
  • Prepare the garlic-infused oil: Mix together olive oil, garlic, salt, and pepper in a small bowl. Use a pastry brush to generously coat both sides of the bread with the flavorful oil mixture, then place the bread on a tray to rest.
  • Preheat your grill to a sizzling 500°F on high heat, setting it up with two zones for direct and indirect grilling.
  • Toast the bread: Toast the slices of bread over high heat for 2 minutes on each side, then set aside before grilling the chicken.
  • Grill the chicken: Sear for 5 minutes on one side, then move to indirect heat and cook for 3 to 5 minutes until internal temperature reaches 165°F.
  • Prepare the salad: Tear the romaine hearts into bite-sized pieces and coat them with the dressing in a large bowl. Serve the greens on plates and add grilled chicken, shaved Parmesan, and grilled croutons. Finally, sprinkle freshly cracked black pepper on top.
