Elevate your Caesar salad with juicy grilled chicken and a tangy homemade dressing.
Ingredients:
  • 3 cloves garlic
  • 2 anchovy filets
  • 2 teaspoons Dijon mustard
  • 1/2 cup mayonnaise
  • 4 teaspoons red wine vinegar
  • 4 teaspoons Worcestershire sauce
  • 1 ounce Parmesan cheese
  • Salt and ground black pepper to taste
Instructions:
  • Combine garlic cloves, anchovy filets, mustard, mayonnaise, red wine vinegar, Worcestershire sauce, and Parmesan cheese in a high-powered blender. Blend on high speed until smooth. Season with salt and pepper to taste.
  • Divide the dressing, storing half in a lidded glass jar in the refrigerator. Pour the rest of the dressing into a resealable plastic bag, add chicken breasts, seal the bag, and refrigerate overnight for marinating.
  • Preheat your gas grill to 400°F (200°C) and brush the grate lightly with oil.
  • Grill chicken with the lid closed on the preheated grill until browned, about 4 to 5 minutes per side. Make sure the juices run clear and an instant-read thermometer inserted near the center reads 165°F (74°C).
  • Allow the juicy chicken to rest on a plate for 10 minutes, then elegantly slice it into strips. Chill the tantalizing chicken strips in the refrigerator until perfectly cold.
  • Tear Romaine lettuce into bite-sized pieces and place in a large bowl. Drizzle chilled dressing over the lettuce and gently mix to coat. Transfer the dressed lettuce onto 4 plates and garnish with croutons, shaved Parmesan, and chicken strips. Serve and savor!
