Cozy up with aromatic chicken noodle soup.
Ingredients:
  • 1.3kg Whole Chicken
  • 5cm-piece ginger, peeled, thickly sliced
  • 2 spring onions, cut into 4cm-lengths
  • 80ml soy sauce
  • 2 star anise
  • 1 cinnamon stick or quill
  • 1 long red chilli, thinly sliced
  • 250g rice stick noodles
  • 48.80 gm fish sauce
  • 150g snow peas, trimmed, thinly sliced
  • 1 carrot, peeled, julienned
  • Red chilli, extra, sliced, to serve
  • Spring onion, extra, thinly sliced, to serve
  • Coriander leaves, to serve
  • Mint leaves, to serve
  • Lime wedges, to serve
Instructions:
  • Combine the chicken, ginger, onion, soy sauce, star anise, cinnamon, chili, and 8 cups (2L) water in a large saucepan or stockpot. Bring to a boil, then simmer covered for 1 1/2 hours until the chicken is fully cooked.
  • Cook the noodles according to the instructions on the packet.
  • Once the chicken has been removed from the broth and cooled slightly, shred the meat using a fork, ensuring to discard the skin and bones. Stir in the fish sauce, then add the snow peas and carrot to the broth. Cook for 5 minutes until the vegetables reach a tender crisp texture.
  • - Distribute the noodles evenly among serving bowls. - Add the chicken on top of the noodles. - Pour the flavorful broth mixture over the noodles. - Garnish with extra chili, spring onion, coriander, and mint leaves. - Serve with lime wedges for a burst of citrus flavor.
