Indulge in comforting chicken pho nightly!
Ingredients:
  • 100g vermicelli noodles
  • 2 zucchini, cut into long matchsticks
  • 380g cooked chicken
  • 2 spring onions, thinly sliced diagonally
  • 125.00 ml coriander leaves
  • 1 long red chilli, thinly sliced diagonally (optional)
  • 1l chicken
  • 21.00 gm light soy sauce
Instructions:
  • Cut the noodles in half, then use scissors to cut each half crossways into 4 even portions.
  • Distribute the noodle portions into four 3-cup (750ml) jars or serving bowls along with the zucchini, chicken, spring onion, coriander, and chili (optional).
  • In a small saucepan, combine the broth, soy sauce, and 2 cups (500ml) water. Heat over medium heat until it simmers.
  • Right before serving, elegantly drizzle the broth mixture over the noodle mixture in the jars or bowls. Cover and let sit for 5 minutes until the noodles are tender and everything is heated through.
