Healthy twist on classic pho: fragrant broth with ginger, cinnamon, and star anise, paired with zucchini noodles and broccolini for a veggie boost.
Ingredients:
  • 1 white onion, thinly sliced
  • 3cm-piece fresh ginger, peeled, thinly sliced
  • 3 whole star anise
  • 1 cinnamon stick
  • 500ml (2 cups) Salt Reduced Stock Chicken Style
  • 6.10 gm fish sauce
  • 400g chicken breast fillets
  • 150g pad Thai noodles
  • 1 bunch broccolini, cut into 3cm pieces
  • 1 bunch buk choy, halved
  • 2 zucchini, cut into noodles using a julienne peeler or a spiraliser
  • 160g (2 cups) bean sprouts
  • Thinly sliced long fresh red chilli, to serve
  • Lime wedges, to serve
  • Fresh Vietnamese mint leaves, to serve (substitute Thai basil or coriander)
Instructions:
  • In a large saucepan over medium heat, combine onion, ginger, star anise, cinnamon, stock, fish sauce, and 750ml (3 cups) water. Bring to a boil, then lower the heat. Add the chicken, cover with a slightly tilted lid, and simmer for 20 minutes until chicken is cooked through. Transfer chicken to a cutting board using tongs and let it cool slightly. Keep cooking the stock mixture covered for another 20 minutes.
  • Use 2 forks to pull apart the chicken into bite-sized pieces. Place the noodles in a large heatproof bowl and cover them with boiling water. Allow them to sit for 5 minutes until tender, then drain.
  • After straining the flavorful stock into a large jug to remove the solids, pour it back into the pan over medium heat. Add broccolini and chicken and let it simmer for 2 minutes. Finally, add bok choy and zucchini and simmer for 1-2 minutes until the vegetables are vibrant green and tender-crisp.
  • Ladle the flavorful pho over the noodles in each serving bowl, then sprinkle with sprouts, chili, a squeeze of lime, and fresh mint leaves for a burst of vibrant flavors.
