Elevate the classic dish with a zesty lemon sauce, enhanced with earthy mushrooms and tender artichokes.
Ingredients:
  • 1 cup all-purpose flour
  • 0.5 teaspoon paprika
  • 1 pinch salt and pepper to taste
  • 1 pound skinless, boneless chicken breast halves - cut into thin strips
  • 0.25 cup vegetable oil
  • 4 ounces fresh mushrooms, sliced
  • 0.25 cup lemon juice
  • 0.75 cup chicken stock
  • 0.5 teaspoon garlic powder
  • 1 (14 ounce) can artichoke hearts, drained and quartered
Instructions:
  • Combine flour, paprika, salt, and pepper in a shallow bowl. Coat chicken pieces evenly in the seasoned flour mixture.
  • In a large skillet over medium heat, heat oil until shimmering. Sear chicken until lightly golden brown on both sides (approximately 45 seconds per side). Transfer chicken to a plate and reserve.
  • Add mushrooms, lemon juice, and chicken stock to the skillet. Simmer until a smooth, light sauce forms. Season with garlic powder. Add chicken back to the skillet and simmer until fully cooked. Gently stir in artichoke hearts, then remove from heat.
