Impress with an easy one-pan Italian chicken piccata with artichokes in a flavorful lemon sauce!
Ingredients:
  • 0.75 cup all-purpose flour
  • 0.125 teaspoon garlic powder
  • 0.125 teaspoon black pepper
  • 0.5 teaspoon Italian seasoning
  • 4 skinless, boneless chicken breast halves, pounded 1/2 inch thick and cut into thirds
  • 1 onion, minced
  • 1 (14.5 ounce) can chicken broth
  • 1 (13.75 ounce) can artichoke hearts, drained and chopped, liquid reserved
  • 0.25 cup capers, with liquid
  • 2 tablespoons butter
Instructions:
  • Combine flour, garlic powder, salt, pepper, and Italian seasoning on a plate. Lightly coat chicken pieces in the seasoned flour mixture, dredging one at a time.
  • In a large skillet over medium-high heat, sear the chicken pieces in olive oil for 2 minutes per side until golden brown. Set aside.
  • In the same skillet, sauté garlic and onion until translucent for about 5 minutes. Increase heat, pour white wine, let it reduce by half in 4 to 5 minutes. Add chicken broth, lemon juice, artichoke hearts, reserved liquid, and chicken. Simmer on medium heat until sauce thickens for about 20 minutes. Finish by stirring in capers and butter.
