Delicious and healthy chicken spinach combo.
Ingredients:
  • 27.60 gm vegetable oil
  • 1 medium brown onion, chopped
  • 1 garlic clove, finely chopped
  • 2cm piece fresh ginger, peeled, finely chopped
  • 2.50 gm paprika
  • 1 tsp ground turmeric
  • 150g baby spinach
  • 255.00 gm chicken style liquid stock
  • 500g chicken thigh fillets, trimmed, cut into 3cm pieces
  • 125.00 ml plain yoghurt
  • Steamed basmati rice, to serve
  • Chapati bread, to serve
Instructions:
  • In a large frying pan over medium heat, warm up 2 teaspoons of oil. Saute the onion for 3 minutes until softened. Stir in garlic, ginger, paprika, and turmeric. Cook for 1 minute until fragrant. Add spinach and stock, cook for 5 minutes until spinach wilts. Allow to cool for 10 minutes, then blend until nearly smooth.
  • - Heat the remaining oil in a pan over medium-high heat and cook the chicken in batches for 3 to 4 minutes until golden and cooked through. Then, reduce the heat to medium-low.
  • Combine the spinach mixture with a sprinkle of salt in the pan. Cook, stirring occasionally, until simmering, about 5 minutes. Remove from heat, then gently stir in the yoghurt. Serve alongside rice and bread.
