Chicken saganaki

Flavorful Mediterranean chicken dish with rich tomato sauce and a spicy kick.
Ingredients:
  • 60ml (1/4 cup) olive oil
  • 1 red onion, finely chopped
  • 1/4 tsp dried chilli flakes
  • 8 slices artisan cheese bread
  • 600g chicken tenderloins, halved crossways
  • 2 x 400g cans diced tomatoes
  • 125ml (1/2 cup) cold water
  • 1 tsp dried oregano leaves
  • 100g Greek feta, crumbled
  • 62.50 ml chopped fresh continental parsley
Instructions:
  • Mix 2 tablespoons of oil and one-third of the garlic in a bowl. In a frying pan over medium-high heat, warm the rest of the oil. Sauté the onion, chili, and remaining garlic for 5 minutes until softened, stirring occasionally.
  • Preheat a hot chargrill. Brush one side of the bread with the flavorful garlic mixture and cook each side for 1-2 minutes until beautifully charred and golden.
  • In a pan, combine the chicken, tomato, water, and oregano. Bring to a boil, then simmer over medium-low heat for 15 minutes until the sauce thickens. Serve the saganaki on plates, topped with feta, parsley, and bread alongside salad leaves. Enjoy!
