Ginger and star anise-infused boiled chicken mixed with fresh diced fruit and homemade dressing.
Ingredients:
  • 1 (1 inch) piece fresh ginger root
  • 1 star anise pod
  • 2 skinless, boneless chicken breast halves
  • 0.5 cup mayonnaise
  • 0.125 teaspoon salt
  • 1 pinch ground black pepper
  • 1 pinch paprika
  • 0.5 teaspoon honey
  • 0.5 cup diced celery
  • 0.5 cup diced apples
  • 0.25 cup diced red onion
  • 0.25 cup chopped raisins
  • 0.25 cup chopped walnuts
  • 2 teaspoons minced fresh ginger root
Instructions:
  • In a pot over medium heat, simmer 1-inch piece of ginger and star anise in water until boiling. Add chicken and simmer on medium-low heat until cooked through, about 10-12 minutes. Transfer chicken to a plate to cool, then dice into bite-sized pieces when ready.
  • Prepare a flavorful dressing by combining mayonnaise, salt, pepper, paprika, and honey; then, set it aside.
  • In a bowl, mix diced chicken, celery, apple, onion, raisins, walnuts, and 2 teaspoons of minced ginger. Drizzle dressing over the mixture and stir until everything is evenly coated. Refrigerate covered overnight.
