Prosciutto-wrapped chicken with sage - a delicious family favorite.
Ingredients:
  • 4 x 125g chicken breast fillets
  • 4 prosciutto slices
  • 12 sage leaves
  • 40g unsalted butter
  • 150ml Marsala (see note)
  • 100ml chicken style liquid stock
  • 21.00 gm lemon juice
  • 200g green beans, trimmed, shredded
  • 40.00 ml toasted slivered almonds
Instructions:
  • Gently pound each chicken fillet between sheets of parchment paper to an even thickness. Season the fillets, then lay a slice of prosciutto and a sage leaf on each piece and fasten with a toothpick.
  • In a frypan over medium heat, heat oil and butter. Place chicken in the pan, prosciutto-side down, and cook for 5 minutes until the prosciutto crisps up. Flip the chicken, add remaining sage leaves, and cook for another 5 minutes. Remove from pan, cover loosely with foil, and let it rest.
  • Put the pan back on the heat, pour in the Marsala, stock, and lemon juice, and simmer for 2-3 minutes until it thickens to a syrupy consistency.
  • While the beans are cooking in boiling salted water for 2 minutes, drain them. Add the almonds and remaining 20g butter to the pan, season well, and toss everything together.
  • Plate the chicken alongside a generous ladle of savory sauce and a side of tender beans.
