Try this easy and delicious saltimbocca recipe for a taste of Italy at home.
Ingredients:
  • 800g baby potatoes
  • 2 chicken breast fillets, halved horizontally
  • 4 slices prosciutto
  • 8 sage leaves
  • 20g butter
  • 20.00 ml chopped sage
  • 120g pkt mixed salad leaves
Instructions:
  • Boil potatoes in a saucepan of water until tender, about 15 minutes.
  • Place the chicken between sheets of plastic wrap and gently pound until 1cm thick. Layer a slice of prosciutto on a work surface, add 2 sage leaves, then place a piece of chicken in the center. Wrap the prosciutto around the chicken, pressing firmly to secure. Repeat with the remaining ingredients.
  • In a large frying pan over medium heat, heat the butter and oil. Place the chicken in the pan, sage-side up, and cook for 2 minutes. Flip and cook for another 2 minutes until the chicken is golden brown and fully cooked. Transfer to a plate and cover loosely with foil.
  • Drain the potatoes and toss them in the pan with the chopped sage until well coated.
  • Arrange the chicken, potatoes, and salad leaves on individual serving plates, then season to taste.
