Elevate your dinner with easy, gourmet chicken scallopini in tangy lemon piccata sauce. Ideal for a romantic meal.
Ingredients:
  • 0.5 cup all-purpose flour
  • 0.25 cup butter, softened
  • 1 clove garlic, pressed
  • 2 skinless, boneless chicken breast halves
  • salt and ground black pepper to taste
  • 4 ounces sliced mushrooms
  • 0.25 cup white wine
  • 2 tablespoons chicken-flavored demi-glace, or to taste
  • 2 tablespoons lemon juice
  • 20 capers, or to taste
  • 1 teaspoon chopped fresh parsley, or to taste
  • 2 lemon slices
Instructions:
  • Spread the flour evenly on a dish. Combine butter and garlic in a small bowl until fully mixed.
  • Carefully butterfly each chicken breast using a sharp knife, keeping it intact on one side. Flatten the breasts evenly with a mallet and coat both sides with flour.
  • In a large skillet over medium heat, melt garlic butter until fragrant. Cook chicken until golden brown on each side for 6 to 8 minutes. Season with salt and pepper. Transfer to a platter and cover to retain warmth.
  • Saute mushrooms in the remaining butter until golden around the edges, for about 5 to 7 minutes. Add wine, demi-glace, lemon juice, and capers, then simmer gently. Season with salt and pepper, and fold in the parsley.
  • Plate the chicken and generously drizzle the sauce on top. Finish with a decorative touch of lemon slices for a fresh twist.
