Light and flavorful family favorite recipe now low-fat and low-calorie for weight-conscious individuals.
Ingredients:
  • 1 bunch English spinach, trimmed, washed
  • 2 x 200g chicken breast fillets, halved horizontally
  • 400g can diced tomato (no added salt)
  • 1 garlic clove, crushed
  • 1/2 tsp dried oregano
  • 80g leg ham
  • 80g Light grated mozzarella
Instructions:
  • Preheat a frying pan over high heat. Add spinach and cook for 1 minute until wilted. Set aside. Spray the pan with oil and cook chicken for 2 minutes on each side or until golden.
  • Preheat your oven to 180°C. pour the tomatoes into a 2-liter ovenproof dish. Mix in the garlic and oregano, then spread the mixture evenly over the base of the dish.
  • Layer the chicken on top of the tomato mixture, then neatly tuck a slice of ham on top. Add spinach followed by mozzarella. Bake for 15-20 minutes until the cheese is melted. Season with pepper to taste.
