Quick and tasty chicken scaloppine made with Progresso® bread crumbs and broth for a flavorful Italian meal ready in just 25 minutes.
Ingredients:
  • 4 boneless skinless chicken breasts (1 1/2 lb)
  • 1 egg white
  • 2 teaspoons water
  • 1/2 cup Progresso™ Italian style bread crumbs
  • 2 teaspoons olive oil
  • 1/2 cup Progresso™ reduced-sodium chicken broth (from 32-oz carton)
  • 1 tablespoon fresh lemon juice
Instructions:
  • Place each chicken breast between sheets of plastic wrap or waxed paper and gently pound the smooth side with a meat mallet or rolling pin until it is 1/4 inch thick.
  • In a shallow bowl, whisk together the egg white and water. In another shallow bowl, place the bread crumbs. Dip the chicken in the egg mixture, then coat it with the bread crumbs.
  • Heat oil in a 12-inch nonstick skillet over medium-high heat. Cook chicken for 6 to 8 minutes, turning once, until no longer pink in the center. Remove chicken from skillet and cover to keep warm.
  • Add the broth and lemon juice to the skillet, then raise the heat to high. Cook without covering for 2 to 3 minutes until the sauce reduces to 1/3 cup. Finally, generously drizzle approximately 1 tablespoon of the sauce over each chicken breast before serving.
