Whip up a cozy Valentine's Day dinner with this easy chicken scaloppine recipe for two.
Ingredients:
  • 1 large chicken breast fillet
  • Extra virgin olive oil spray
  • 120g fresh ricotta
  • Salt & freshly ground pepper
  • 345g vegetale butternut pumpkin & sage pasta sauce
  • 2 large chargrilled red capsicum slices
  • Mixed salad leaves, to serve
Instructions:
  • Begin by horizontally cutting the chicken breast in half. Next, spray a frying pan with olive oil and heat over medium heat. Cook the chicken for approximately 4 minutes on each side until golden and fully cooked. Then, transfer the cooked chicken to a plate.
  • Preheat the grill to high. Season ricotta with salt and pepper, mix well. Spread pasta sauce in a frying pan. Layer chicken over the sauce, top with capsicum, spread ricotta, and spray with olive oil.
  • Grill until beautifully golden for 8-10 minutes, remembering not to put the frying pan handle under the grill unless it's ovenproof. Serve alongside fresh salad leaves.
