Golden baked chicken schnitzel with apple-radish salad ready in just 30 minutes.
Ingredients:
  • 4 Chicken Breast Schnitzels
  • 1 Granny Smith apple, thinly sliced crossways
  • 2 spring onions, thinly sliced
  • 1 bunch radishes, trimmed, thinly sliced
  • 120g pkt Baby Rocket
  • 20.00 ml basil, chopped
  • 40.00 ml red wine vinegar
  • 28.60 gm honey
  • 18.20 gm olive oil
  • Lemon wedges, to serve
Instructions:
  • Preheat oven to 200C and line a large baking tray with paper. Cook the chicken schnitzels as per package instructions.
  • In a large bowl, mix together the apple, spring onion, radish, and rocket. In a small bowl, whisk together the basil, vinegar, honey, and olive oil. Drizzle the dressing over the apple mixture, and season to taste.
  • Present the chicken schnitzels alongside the apple salad and lemon wedges.
