Delicious French crepes filled with rotisserie chicken, spinach, shallots, and creamy Brie.
Ingredients:
  • 0.75 cup milk
  • 0.5 cup all-purpose flour
  • 1 tablespoon melted butter
  • 1 pinch salt
  • cooking spray
  • 1 tablespoon butter
  • 1 cup spinach leaves
  • 0.25 cup sliced shallots
  • 1 cup chopped cooked chicken
  • 0.5 cup Brie cheese
Instructions:
  • Combine milk, flour, eggs, melted butter, and salt in a blender until smooth. Allow the mixture to rest for 15 minutes.
  • Preheat a 12-inch nonstick skillet over medium heat. Lightly spray with cooking spray, then pour in 1/2 cup of batter, swirling to evenly coat the bottom. Cook until golden brown underneath, about 2 to 3 minutes. Gently loosen the edges with a rubber spatula and flip the crepe with your fingers, cooking for an additional minute.
  • Gently transfer the crepe out of the skillet. Repeat with the rest of the batter, spraying the skillet between each crepe. Stack the cooked crepes on top of each other to keep warm.
  • In a separate skillet over medium-high heat, melt butter. Saute spinach and shallots until softened, about 3 minutes. Add chicken, mix well, and heat through for 3 to 4 minutes. Set aside.
  • Spread a generous amount of creamy Brie cheese over a luscious crepe, then layer on the savory chicken filling. Gently fold the crepe in half, returning it to the skillet to melt the cheese to perfection. Finally, roll the crepe into a delightful cone shape before serving.
