Grilled chicken street tacos with a hint of smoky flavor.
Ingredients:
  • 1 pound boneless, skinless chicken thighs, trimmed of excess fat
  • 2 tablespoons fresh lime juice
  • 2 tablespoons vegetable oil
  • 2 cloves garlic, minced
  • 1/2 teaspoon cumin
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 24 mini yellow corn tortillas, street taco size
  • 1/3 cup minced white onion
  • 1/3 cup minced cilantro
  • Mexican hot sauce (such as Valentina(R)), optional
  • 4 lime wedges
Instructions:
  • Place chicken in a gallon-size resealable bag with lime juice, vegetable oil, garlic, cumin, coriander, and chili powder. Seal the bag and massage until chicken is coated. Refrigerate and marinate for 1 to 2 hours.
  • Get your outdoor grill nice and hot by preheating it to high heat, then give the grate a light coating of oil.
  • Take the chicken out of the marinade and place it on the hot grill, discarding the marinade. Grill over direct heat until juices run clear, about 6 to 8 minutes per side. Check with an instant-read thermometer to ensure it reaches at least 165 degrees F (74 degrees C). Transfer the grilled chicken to a plate, let it rest for 5 minutes, then chop it into small pieces and keep it warm.
  • Stack 2 tortillas and grill until warm, about 20-30 seconds each side. Divide chicken mixture among the 12 tortilla stacks. Garnish with onion, cilantro, and optional hot sauce. Serve with lime wedges.
