Authentic Thai street food with a family twist, served with a tangy sweet chili sauce. Perfect for parties with its crowd-pleasing flavors.
Ingredients:
  • 0.5 cup coconut milk
  • 2 tablespoons fish sauce
  • 2 tablespoons minced garlic
  • 2 tablespoons chopped cilantro
  • 1 teaspoon ground turmeric
  • 1 teaspoon curry powder
  • 0.5 teaspoon white pepper
  • 0.5 (3 pound) chicken, cut into pieces
  • 6 tablespoons rice vinegar
  • 4 tablespoons water
  • 4 tablespoons white sugar
  • 1 teaspoon minced garlic
  • 0.5 teaspoon minced bird's eye chile
Instructions:
  • Combine coconut milk, fish sauce, minced garlic, cilantro, turmeric, curry powder, and white pepper in a shallow dish. Add chicken, ensuring it is fully coated. Cover and chill in the refrigerator for 4 hours or overnight.
  • Preheat the grill until it reaches a high heat.
  • Combine vinegar, water, sugar, minced garlic, bird's eye chile, and salt in a saucepan. Bring to a boil and simmer on low heat until liquid is reduced, about 5 minutes, stirring occasionally. Allow to cool before using.
  • Prepare the grill by coating the grate with a touch of oil. After discarding the marinade, grill the chicken for 10 minutes on each side until it develops a slight char and the juices are clear. Brush the chicken with sauce right before serving and offer the extra sauce on the side for dipping.
