Herb and spice grilled chicken with sweet chili sauce - fresh, healthy, and affordable.
Ingredients:
  • 30.00 ml chopped fresh coriander root
  • 3 garlic cloves, finely chopped
  • 48.80 gm fish sauce
  • 16.00 gm brown sugar
  • 1/4 tsp white pepper
  • 4 large chicken thigh fillets, excess fat trimmed
  • Olive oil spray
  • Steamed white rice, to serve
  • Baby cos lettuce, quartered, to serve
  • Sweet chilli sauce, to serve
Instructions:
  • Combine coriander root, garlic, fish sauce, sugar, pepper, and turmeric in a food processor and blend until smooth. Transfer the marinade to a bowl, then add the chicken and ensure it is evenly coated.
  • Heat up your barbecue grill or chargrill over medium-high heat. Give the chicken a light spray of oil and grill for about 6 minutes on each side until it's beautifully golden and cooked through. Then, slice the chicken into thick strips. Arrange the chicken, rice, and lettuce on plates, garnish with fresh coriander, and serve with a side of sweet chilli sauce. Enjoy your delicious meal!
