Gai laan with butter, lemon and almonds

"Quick and crispy Chinese broccoli side dish."
Ingredients:
  • 2 bunches gai laan, washed (see note)
  • 50g butter, chopped
  • 62.50 ml roughly chopped almond kernels (skin on)
  • 42.00 gm lemon juice
Instructions:
  • 1. Divide gai laan into stems and leaves. Microwave the stems in a bowl covered with plastic wrap on high for 2 minutes until nearly tender. Then, add the leaves, cover, and microwave for an additional 3 minutes until the leaves are wilted and the stems are tender.
  • In a large frying pan over medium-high heat, melt butter until golden, then add almonds and cook until golden. Add gai laan and toss until coated, then add lemon juice and toss to combine. Serve immediately.
