Gai lan with oyster sauce

Gai lan perfectly balances crunchy stems and tender leaves with savory oyster sauce.
Ingredients:
  • 48.80 gm oyster sauce
  • 21.00 gm soy sauce
  • 20.00 ml dry sherry
  • 18.20 gm peanut oil
  • 2 garlic cloves, finely chopped
  • 1 large bunch gai lan (Chinese broccoli), stems and leaves separated
  • 80ml (1/3 cup) chicken style liquid stock
  • Pinch of white pepper
Instructions:
  • In a small bowl, mix the oyster sauce, soy sauce, and sherry together.
  • In a hot wok, add oil, let it heat until smoking. Swirl to coat, stir-fry garlic for 1 minute until aromatic.
  • Sauté gai lan stems in the wok until coated, then pour in stock and cook for 2 minutes until almost tender. Mix in gai lan leaves and oyster sauce, stir-frying until leaves just wilt. Season with white pepper.
