Elevate spring greens with a bold east-west dressing and tangy kimchi for a flavorful twist.
Ingredients:
  • 200g gai laan or choi sum, stems and leaves separated
  • 200g small green beans, trimmed
  • 200g asparagus, trimmed
  • 100g frozen peas, thawed
  • 12.00 gm sesame seeds, toasted
  • 25g kimchi
  • 36.40 gm extra virgin olive oil
  • 24.40 gm oyster sauce
  • 20.00 ml rice vinegar
  • 42.00 gm soy sauce
  • 5.00 gm caster sugar
  • 1 tsp sesame oil
Instructions:
  • Combine all dressing ingredients in a bowl and whisk together. Set aside.
  • Simmer greens in a large saucepan of salted water for 3 minutes until tender, then drain and place on a serving platter.
  • Drizzle the dressing over and garnish with sesame seeds and kimchi before serving.
