Quick and satisfying beef and potato curry ready in under an hour.
Ingredients:
  • 2 tablespoons butter, or more to taste
  • 2 onions, diced
  • 1 clove garlic, minced
  • 1.5 tablespoons curry powder
  • 2.5 teaspoons salt
  • 1 teaspoon ground turmeric
  • 1 teaspoon cayenne pepper
  • 0.25 teaspoon ground ginger
  • 0.5 cinnamon stick
  • 1 pound ground beef
  • 2 potatoes, diced
  • 2 tomatoes, diced
Instructions:
  • In a large wok or skillet over high heat, melt the butter. Saute the onions and garlic until the onions are nearly transparent, approximately 5 minutes.
  • Mix together a medley of curry powder, salt, turmeric, cayenne pepper, black pepper, ginger, and cinnamon in a bowl.
  • Incorporate ground beef into the fragrant onion mixture, breaking it into little crumbles, and cook until the beef is browned and fully cooked, for about 5 to 7 minutes. Mix in the curry blend thoroughly.
  • Combine the potatoes and tomatoes with the ground beef mixture in the wok. Reduce heat to medium, cover, and simmer until the potatoes are tender, approximately 20 minutes.
