Fluffy South Asian flatbread with a delightful chewiness.
Ingredients:
  • 2 tablespoons warm water (110 degrees F/45 degrees C)
  • 1 teaspoon white sugar
  • 1 (.25 ounce) package active dry yeast
  • 0.25 cup warm milk
  • 0.25 cup plain yogurt, room temperature
  • 4 tablespoons melted butter
  • 3 cups unbleached all-purpose flour
  • 1 teaspoon salt
  • 0.5 teaspoon baking powder
  • 0.5 teaspoon nigella seeds (kalonji)
Instructions:
  • In a small bowl, combine warm water, sugar, and yeast. Stir until fully dissolved. Let it sit for 5-10 minutes until it becomes foamy.
  • Combine warm milk, yogurt, and melted margarine in a blender. In a large bowl, combine flour, salt, baking powder, and poppy seeds. Add the yeast/milk mixture to the dry ingredients and knead with your hands until the mixture comes together. Gradually incorporate more flour or water until the dough pulls away from the sides of the bowl.
  • Knead the dough for 6 to 8 minutes until it is smooth and elastic. Place it in a lightly oiled bowl, ensuring it is coated with oil. Cover with a damp cloth and let it rise in a warm place for about 4 hours, or until it doubles in volume.
  • Preheat your oven to its highest setting (at least 550 degrees F/285 degrees C) with a rack positioned in the lower third. Place a large pizza pan or iron griddle on the rack to preheat along with turning on the broiler.
  • Gently deflate the dough and briefly knead before dividing it into six pieces, shaping each into a ball. Arrange the balls on an oiled plate, cover with lightly oiled plastic wrap, and let rest for 10 to 15 minutes. Roll and stretch each ball to a 10x5-inch oval. Preheat the pizza pan, brush with oil, and place one piece of bread on it.
  • Preheat oven to 550°F (285°C). Bake the bread for 4 to 5 minutes until puffed and browned. Transfer to a wire rack and keep warm in the oven. Broil until 'charcoal' dots appear. Wrap in a towel while baking the rest. (You can bake two loaves at once if your pizza pan is large enough.)
