"Mexican-inspired cornbread casserole with spiced chicken, mushrooms, green chiles, and cheesy sour cream sauce."
Ingredients:
  • 0.5 cup butter
  • 1 onion, finely chopped
  • 1 clove garlic, minced
  • 1 (15.25 ounce) can whole kernel corn, drained
  • 1 (15 ounce) can cream-style corn, drained
  • 0.5 cup egg substitute
  • 1 (8.5 ounce) package corn bread mix
  • 2.3333332538605 cups chopped cooked chicken breast
  • 2 tablespoons canned green chile peppers, chopped
  • 4 ounces sliced fresh mushrooms
  • 1.5 cups reduced-fat sour cream
  • 0.25 teaspoon salt, or to taste
  • 0.25 teaspoon ground black pepper, or to taste
  • 1 (8 ounce) package Monterey Jack cheese, shredded
Instructions:
  • Preheat the oven to a toasty 375 degrees F (190 degrees C), then generously grease a 9x13-inch baking dish.
  • In a small skillet, melt butter over medium heat. Sauté onion and garlic until tender, about 4 to 6 minutes. Remove from heat and set aside. In a large bowl, mix corn, cream-style corn, salt, and egg substitute. Stir in muffin mix. Gently fold in the cooked onion mixture. Transfer the mixture to a prepared baking dish.
  • Combine chicken, green chiles, mushrooms, sour cream, salt, and pepper in a large bowl. Spread evenly over corn mixture, leaving a 1-inch border. Top with cheese before baking.
  • Place in a preheated oven and bake until edges turn a beautiful golden brown, about 35-40 minutes.
