Cheesy, smoky chicken taquitos with zesty green salsa for an irresistible crunch!
Ingredients:
  • 4 skinless, boneless chicken breast halves - cooked and shredded
  • 1.5 cups shredded smoked Cheddar and Swiss cheese blend
  • 1 (7 ounce) can green salsa
  • 1 cup chopped onion
  • 20 (6 inch) corn tortillas
  • 1 quart peanut oil for frying, or as needed
  • 1 cup sour cream
  • 1 cup chunky salsa
  • 1 cup guacamole
Instructions:
  • Preheat oil in a deep-fryer to 350 degrees F (175 degrees C) until hot.
  • Combine shredded chicken, cheese, green salsa, and onion in a medium bowl. Place about 1 1/2 tablespoons of the mixture onto each tortilla, ensuring that each roll is about 1 inch wide. Avoid overfilling to prevent spillage. Secure with toothpicks.
  • Fry 4 or 5 rolls at a time with ample space for even cooking. Fry until golden brown for 3 to 5 minutes and an additional minute after they float. Ensure crispness before removing. Drain on paper towels and serve with sour cream, salsa, and guacamole for dipping.
