Make delicious spicy chicken taquitos with leftover chicken, sour cream, cheese, flour tortillas, and hot sauce.
Ingredients:
  • 2 cooked skinless, boneless chicken breast halves, shredded
  • 0.5 cup shredded pepper Jack cheese, divided
  • 0.25 cup shredded Cheddar cheese
  • 2 tablespoons sour cream
  • 1 tablespoon hot pepper sauce (such as Tapatio®)
  • 1 tablespoon chopped fresh cilantro
  • 0.5 tablespoon crushed red pepper flakes
  • 0.5 teaspoon garlic powder
  • 0.5 teaspoon onion powder
  • 8 (6 inch) flour tortillas
  • 6 tablespoons sour cream
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C) and line a baking sheet with aluminum foil.
  • Mix together shredded chicken, half of the pepper Jack cheese, Cheddar cheese, sour cream, hot pepper sauce, cilantro, red pepper flakes, garlic powder, and onion powder until well combined in a medium bowl.
  • Distribute the filling evenly among the tortillas, roll them tightly, and place seam-side down on the baking sheet.
  • Bake in the preheated oven for 10 minutes. Flip taquitos, sprinkle with the rest of the pepper Jack cheese, and bake for an additional 5 minutes until cheese is melted and taquitos are crispy.
  • Prepare a zesty dipping sauce by combining sour cream and hot pepper sauce in a small bowl. Enjoy with freshly baked taquitos.
