Chicken Vegetable Couscous

Quick and flavorful chicken couscous skillet with garbanzo beans - ready in just 20 minutes!
Ingredients:
  • 1 package (10 ounces) couscous
  • 1 tablespoon olive or vegetable oil
  • 1 pound boneless, skinless chicken breast halves, cut into 1-inch pieces
  • 2 large tomatoes, chopped (2 cups)
  • 1 small red bell pepper, chopped (1/2 cup)
  • 8 medium green onions, chopped (1/2 cup)
  • 1 clove garlic, finely chopped
  • 1 tablespoon chopped fresh or 1 teaspoon dried oregano leaves
  • 1 teaspoon paprika
  • 1 can (15 ounces) Progresso™ garbanzo beans, rinsed and drained
  • 1/4 cup shredded Parmesan cheese
Instructions:
  • Prepare the couscous according to package instructions.
  • In a 10-inch skillet, heat oil over medium heat. Add chicken and cook for 5 minutes, stirring occasionally.
  • Add the rest of the ingredients, excluding the cheese. Cook uncovered for 4 to 5 minutes, or until the chicken is fully cooked in the middle and the vegetables are tender-crisp.
  • Serve the savory chicken mixture on a bed of fluffy couscous and generously sprinkle with cheese.
