Gorgeous greek chicken with herby vegetable couscous & tzatziki

Spicy chicken served with vegetable-filled couscous and refreshing mint cucumber yogurt.
Ingredients:
  • 1 mug (300g) of couscous
  • 2 mixed-colour peppers
  • 1 fresh red chilli
  • 4 spring onions
  • ½ a bunch of fresh dill
  • 200 g podded raw or frozen peas
  • 1 small handful of black olives (stone in)
  • 2 tablespoons extra virgin olive oil
  • 40 g feta cheese
  • 2 x 200 g skinless higher-welfare chicken breasts
  • 1 heaped teaspoon dried oregano
  • 1 teaspoon ground allspice
  • 1 lemon
  • olive oil
  • ½ a cucumber
  • 250 g fat-free natural yoghurt
  • ½ a lemon
  • ½ a bunch of fresh mint
Instructions:
  • Gather ingredients • Boil kettle • Heat large frying pan on medium-high • Set up food processor Start cooking Put 1 mug of couscous in a bowl with 2 mugs of boiling water, add a pinch of salt, cover and let steam • Season chicken with salt, pepper, oregano, allspice, and lemon zest on a sheet of greaseproof paper, then flatten to 1.5cm thickness with a rolling pin • Cook chicken in frying pan with 2 tbsp olive oil until golden and cooked through Grate cucumber using box grater, sprinkle with salt, squeeze out water, then mix with yogurt, lemon juice, pepper, and chopped mint • Pulse peppers, chili, spring onions, and dill in food processor until finely chopped, then spread on platter • Combine peas, olives, lemon juice, and olive oil with grated vegetables, then add to couscous and season • Slice chicken and arrange around couscous, top with crumbled feta, and serve with tzatziki
