French chicken with plump grapes in a flavorful white wine and thyme sauce.
Ingredients:
  • 9.20 gm olive oil
  • 4 chicken breast fillets
  • 1 garlic clove, thinly sliced
  • 60ml (1/4 cup) dry white wine
  • 500g crimson seedless grapes, cut into small bunches
  • 125ml (1/2 cup) chicken style liquid stock
  • 8 sprigs fresh thyme
  • 60ml (1/4 cup) thickened cream
  • Crusty bread, to serve
  • Crimson seedless grapes
Instructions:
  • In a frying pan set over medium heat, warm up some oil. Sear the chicken for 2-3 minutes on each side until it turns a light golden color. Remove the chicken from the pan and place it on a plate. Add garlic to the pan and cook for about 30 seconds until fragrant.
  • Place succulent chicken pieces and a generous splash of wine into the sizzling pan, allowing the flavors to meld for about a minute until the liquid slightly reduces. Introduce the sweet grapes, flavorful stock, and aromatic thyme to the mix. Let it all simmer gently for around 10 minutes until the chicken is perfectly cooked.
  • - Plate the chicken and grapes. - Stir in the cream to the wine mixture. - Simmer on low for 2 minutes until slightly thickened. - Serve the chicken on plates, top with sauce and grapes, and enjoy with bread.
