Last minute chicken and gravy, served with mashed potatoes or stuffing and green beans.
Ingredients:
  • 4 skinless, boneless chicken breast halves - cut into bite-size pieces
  • salt and pepper to taste
  • 0.5 cup all-purpose flour
  • 1 tablespoon vegetable oil
  • 1 (14.5 ounce) can chicken broth
Instructions:
  • In a bowl, combine chicken with salt, pepper, and garlic. Add flour and toss to coat the chicken evenly.
  • In a large skillet over medium heat, warm the oil and butter. Dredge the chicken in flour, reserving any excess. Sear the chicken in the hot skillet until golden brown on all sides. Set aside and keep warm.
  • Create a velvety mixture by whisking some chicken broth into the flour in a bowl. Incorporate it into the drippings in the skillet, then add the rest of the broth. Bring to a boil, then lower the heat and reintroduce the chicken pieces. Simmer until chicken is fully cooked and sauce thickens. Taste, and adjust seasoning with salt and pepper to your liking.
