Ingredients:
  • 18.40 gm oil
  • 2 cloves garlic, crushed
  • 2 rashers bacon, diced
  • 2 chicken breast fillets, diced
  • 375.00 ml sliced mushrooms
  • 40.00 gm white wine
  • 600ml cream
  • 23.40 gm dijon mustard
  • 1 bunch asparagus, chopped
  • 125.00 ml chopped spring onions
  • 8 medium vol au vents
  • 250.00 ml grated cheese
Instructions:
  • Preheat your oven to 180 degrees Celsius.
  • In a large saucepan over medium heat, warm 1 tablespoon of oil.
  • Cook the bacon and garlic together for 2 minutes.
  • Sear the chicken breast fillets until they turn golden brown.
  • Toss in the mushrooms and sauté for an extra minute.
  • Add the wine and cream to the mixture, then incorporate the mustard while stirring gently.
  • Toss in the vibrant asparagus and fresh spring onions and sauté until tender, about 3 minutes.
  • Take off the heat and let it cool for 10 minutes.
  • Arrange your vol au vents neatly on a baking tray, generously fill them with the savory chicken mixture, then top them off with a shower of cheese. Bake in the oven for 10-15 minutes, or until they turn a beautiful golden color.
  • Accompany with a vibrant mixed salad.
