Spice up your chicken breasts with versatile chilli jam for a burst of flavor in every bite!
Ingredients:
  • 400g chicken breast fillets, cut into strips
  • 1 red onion, cut into wedges
  • 1 carrot, sliced on the diagonal
  • 1 red capsicum, sliced
  • 150g broccoli, cut into small florets
  • 12.20 gm fish sauce
  • 1-52.80 gm chilli jam
  • 50g (1/3 cup) cashews
  • Steamed white rice, to serve
Instructions:
  • In a wok or large nonstick frying pan over medium-high heat, sizzle the chicken in batches in a drizzle of oil until it turns golden brown. Set aside covered to stay warm.
  • Place the wok back on the heat and drizzle in some extra oil. Quickly stir-fry the onion, carrot, bell pepper, and broccoli until they are tender.
  • Stir in the fish sauce and chili jam for 3-4 minutes until fully mixed. Reintroduce the chicken and half of the cashews to the wok. Stir-fry until heated.
  • Plate the dish individually and garnish with steamed rice and the rest of the cashews.
