Chicken with chive and parmesan butter

Moisturize and flavor chicken breast with chive butter infusion.
Ingredients:
  • 160g butter, softened
  • 1 bunch chives, finely chopped
  • 3 garlic cloves, crushed
  • 82.50 ml finely grated parmesan cheese
  • 8 (250g each) chicken half breasts on the bone
  • olive oil cooking spray
Instructions:
  • Mix together the butter, chives, garlic, Parmesan, salt, and pepper in a small bowl.
  • Gently separate chicken skin and fill each piece with a generous spoonful of chive butter. Chill in the fridge for 30 minutes until butter solidifies. Remove from fridge, spray with oil, season with salt and pepper, and preheat oven to 230°C.
  • Arrange the chicken on 2 prepared baking trays. Bake at 220°C for 10 minutes. Rotate the trays. Lower the oven temperature to 200°C and continue baking for 15 more minutes or until the chicken is fully cooked.
  • Allow the chicken to rest for 15 to 20 minutes covered with foil before serving.
